Avocado Lobster Roll

Serves 4

Ingredients

  • Meat from 2 cooked 1.5-lb lobsters, cubed
  • 2 green onions, sliced
  • 1 celery stalk, diced
  • 2 tsp. (10 ml) fresh dill, chopped
  • Juice of ¼ lemon
  • 3 tbsp. (45 ml) mayonnaise (homemade or store-bought)
  • Flesh of 1 avocado, cubed
  • 4 hot dog buns, toasted

Directions

  1. In a bowl, mix the lobster meat with the green onions, celery, dill, lemon juice, mayonnaise and cubed avocado.
  2. Fill the hot dog buns with the mixture and serve.
