Grilled Veggie Sandwich with Avocado

Serves 4


  • 2 ripe Avocados from Mexico
  • 4 large flour tortillas, grilled
  • 2 red peppers, grilled and cut in half
  • 2 zucchinis, grilled and cut lengthwise
  • 1 corn on the cob, grilled (remove kernels with a knife)
  • 2 carrots, julienned
  • 1 romaine lettuce, julienned
  • Olive oil
  • ½ cup of mayonnaise


  1. Mix 1 avocado and the mayonnaise in a blender until smooth. Set aside.
  2. Baste the corn, zucchini, peppers and avocado with olive oil and grill on a barbecue.
  3. Spread a spoonful of avocado mayonnaise on each tortilla. Set the rest aside.
  4. Place grilled vegetables, romaine lettuce and julienned carrots in the middle of each tortilla.
  5. Roll tortillas.
  6. Serve with avocado mayonnaise as a dip.
