Grilled Veggie Sandwich with Avocado

- 2 ripe avocados
- 4 large flour tortillas, grilled
- 2 red peppers, grilled and cut in half
- 2 zucchinis, grilled and cut lengthwise
- 1 corn on the cob, grilled (remove kernels with a knife)
- 2 carrots, julienned
- 1 romaine lettuce, julienned
- Olive oil
- ½ cup of mayonnaise
Preparation
- Mix 1 avocado and the mayonnaise in a blender until smooth. Set aside.
- Baste the corn, zucchini, peppers and avocado with olive oil and grill on a barbecue.
- Spread a spoonful of avocado mayonnaise on each tortilla. Set the rest aside.
- Place grilled vegetables, romaine lettuce and julienned carrots in the middle of each tortilla.
- Roll tortillas.
- Serve with avocado mayonnaise as a dip.
