Montreal Bagel with Herb and Avocado Whipped Ricotta

Base
- ½ cup (125 ml) ricotta cheese
- 1 tbsp. (15 ml) fresh tarragon, chopped
- 1 tbsp. (15 ml) fresh chives, chopped
- 1 tsp. (5 ml) honey
- 2 bagels, halved and toasted
- 2 avocados, peeled, pitted, and sliced
Garnish
- Splash of lemon juice
- Splash of olive oil
- Pinch of cracked pink peppercorns
- Pinch of chives
Preparation
- In a bowl, whisk ricotta with tarragon, chives, and honey.
- Place bagel halves on a work surface and spread with cheese.
- Top each bagel with half an avocado, sliced, drizzle with lemon juice and olive oil, and finish with cracked pink peppercorns and chives.
