Avocado Falafels

  • 1 19 oz. can chickpeas, drained
  • 1 large avocado
  • 1 lime, zest and juice
  • ½ teaspoon of hot sauce
  • 2 garlic cloves
  • 4 tablespoons chopped onion
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 4 tablespoons chopped fresh coriander
  • 4 tablespoons chopped parsley
  • 4 tablespoons chopped mint
  • ½ teaspoon salt and pepper
  • ½ cup dark yellow corn flour

Preparation

  1. Preheat the oven to 350°F.
  2. Place all of the ingredients in a food processer and mix well. If the texture is too wet, add 1 tablespoon of yellow corn flour.
  3. Form the small falafel balls, and coat them with corn flour.
  4. Place the balls on a baking sheet (covered with parchment paper), and bake for 40 minutes.
  5. Serve with pita bread, slices of avocados, tzatziki, tomatoes, onions, coriander, cucumber, etc.
