Ingredients

Avocado and pistachio brownies

  • 125 ml (½ cup) melted butter
  • 310 ml (1¼ cup) sugar
  • 125 ml (½ cup) cocoa powder
  • 2 eggs
  • 1 avocado, puréed
  • 5 ml (1 teaspoon) vanilla extract
  • 125 ml (½ cup) all-purpose flour
  • 1 avocado, puréed
  • 250 ml (1 cup) icing sugar
  • 180 ml (¾ cup) cocoa powder
  • 5 ml (1 teaspoon) vanilla extract
  • 15 ml (1 tablespoon) boiling water
  • 125 ml (½ cup) toasted and crushed pistachios
  • Sea salt, to taste

Preparation

  1. Preheat oven to 170 °C (325 °F). Butter and line an 8 inches square pan.
  2. In a bowl, mix sugar, cocoa powder and melted butter until smooth. Add the remaining ingredients.
  3. Pour the mixture in the pan and bake in the oven for about 25 minutes. Set aside.
  4. For the icing, in a bowl, mix the puréed avocado with the icing sugar, cocoa powder and vanilla extract. Add the boiling water and mix until smooth.
  5. Ice the brownies and garnish with pistachios and sea salt.
