Avocado Falafels

- 1 19 oz. can chickpeas, drained
- 1 large avocado
- 1 lime, zest and juice
- ½ teaspoon of hot sauce
- 2 garlic cloves
- 4 tablespoons chopped onion
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- 4 tablespoons chopped fresh coriander
- 4 tablespoons chopped parsley
- 4 tablespoons chopped mint
- ½ teaspoon salt and pepper
- ½ cup dark yellow corn flour
Preparation
- Preheat the oven to 350°F.
- Place all of the ingredients in a food processer and mix well. If the texture is too wet, add 1 tablespoon of yellow corn flour.
- Form the small falafel balls, and coat them with corn flour.
- Place the balls on a baking sheet (covered with parchment paper), and bake for 40 minutes.
- Serve with pita bread, slices of avocados, tzatziki, tomatoes, onions, coriander, cucumber, etc.
