Why not serve a vegetarian tartar instead of the fish and beef tartar we often see on restaurant menus? Vegetarian tartars aren’t just for vegetarians, or pregnant women, they’re also a great way to increase your fruit and vegetable intake while filling up on vegetable proteins. My favourite combination is a blend of edamame beans, diced green apple, crumbled feta cheese, hummus, diced avocados and a few drops of sesame oil (optional). For those who like it a little crunchier, I garnish them with small fried onions or crushed soybeans. Pro tip: choose your avocados wisely! They must be firm enough to keep the small cubes in shape once served on the plate.
Avocado Tropical Ice Cream
Did you know that ice creams are mostly made of fat (found in large amounts in cream, key ingredient of all good ice creams) to avoid crystallization during the freezing process? Avocados then become the perfect choice for a smooth, consistent ice cream filled with good fat. These good fats are known as mono and polyunsaturated lipids! Studies have shown that there are definite benefits to cardiovascular health when consumed as a substitute for saturated fats. Essentials ingredients for a great avocado ice cream: ripe avocados from Mexico, frozen mango chunks and coconut milk! Once combined, these ingredients make a delicious tropical-style dessert! And here’s another interesting variation: avocados, cream, peppermint liqueur and dark chocolate chips.
Warm Artichoke and Avocado Dip
If you ask me, get-togethers are definitely not the same without artichoke dip! This easy-to-make starter never ceases to amaze my guests by its unique taste and texture. However, my favourite version is a hybrid between guacamole and artichoke dip: warm artichoke and avocado dip! All you have to do is toss in diced avocados to the mix at the very end!
